Corrutela reopens renovated: zero waste meets Green Star
After nine months closed for renovations, Corrutela returns to Vila Madalena stronger than ever. Chef Cesar Costa, who has resumed command of the kitchen following the departure of Canadian chef Daniel Burns, has brought back not only his signature dishes but has solidified the restaurant as Brazil's absolute reference point for gastronomic sustainability.
The March 2026 reopening coincides with historic recognition: Corrutela is one of only three Brazilian restaurants to maintain the Michelin Green Star, which recognizes restaurants that prioritize sustainability. Alongside A Casa do Porco and Tuju, both also from São Paulo, the restaurant proves that sustainability and fine dining are not conflicting concepts.
Vila Madalena's green laboratory
"Because the planet needed it," says Cesar Costa when asked about his decision to create a restaurant entirely focused on sustainability. At 30 years old, the chef has built a true laboratory of sustainable practices on Rua Fernando de Albuquerque, just steps from the famous Beco do Batman.
The revamped menu features 11 sharing recipes, available à la carte or as 4-course (R$240) or 6-course (R$310) tasting menus. The highlight goes to dishes where vegetables take absolute center stage, like the combination of lettuce leaves with poached egg cream, red onion relish, and crispy quinoa (R$42) – meant to be savored with your hands, following the philosophy of closeness to ingredients.
But Corrutela's sustainability extends far beyond the plate. An automatic 30-kilo composter, strategically positioned at the entrance, transforms organic waste into fertilizer in 24 hours, with capacity to process 30 kg of waste daily. The fertilizer produced is donated to local daycare centers and community gardens.
Zero waste that makes financial sense
Costa dismantles a common myth about sustainability: "Many of those who say sustainability is expensive speak without knowing". The chef demonstrates in practice how conscious choices can be economically viable.
Corrutela's location was strategically chosen next to Vila Madalena's Feira Livre farmers market, allowing Costa and his team to walk there to select the best products and buy only what's needed, eliminating waste and delivery costs.
About 25% of the restaurant's energy comes from solar panels installed on the roof, and the investment pays for itself in 4 or 5 years, but the panels will last at least 25 years. Even dishwashing was reimagined: an Israeli-technology machine soaks heavily soiled dishes in biodegradable solution, eliminating the need to scrub under running water.
The kitchen of the future has arrived
Over 90% of everything Costa uses in the kitchen is organic, the result of a relentless search for conscious suppliers. The chef traveled more than 14,000 kilometers throughout Brazil to find specific ingredients, like organic wheat to make the perfect flour for his bread.
At Corrutela, everything is made from scratch. Costa buys cocoa beans directly from farms in Ilhéus to make chocolate for desserts, and produces his own cornmeal with criolle corn in a 1989 stone mill – older than the chef himself.
The approach is pragmatic, not evangelizing. "We only share all the care we take with customers who want to know more about our processes; we don't want to indoctrinate people. We're just doing our part".
